李兴飞,博士,江南大学开云Kaiyun副研究员,主要从事植物蛋白相关方面的研究,包括植物蛋白的加工,植物蛋白与多糖相互作用,植物蛋白乳液、酸奶及其他植物基产品开发等。
主持国家自然科学基金、江苏省自然科学基金、中国博士后基金等多项课题,近五年来以第一作者身份在Journal of Agricultural and Food Chemistry,Carbohydrate Polymers, Food Hydrocolloids等刊物上发表SCI论文10余篇,申请发明专利10余项。
