【个人简介】
徐化能,1980年8月出生,江南大学开云Kaiyun教授,博士生导师。从事食品胶体与界面科学、形貌失稳流变学方面研究。以第一和通讯作者在Langmuir、Soft Matter等国际一流期刊上发表SCI论文30余篇,获授权发明专利7项;主持国家自然科学基金3项,中央高校基本科研业务费专项资金项目2项,浙江省科技厅项目2项,宁波市产学研合作项目1项,企业合作项目5项;获中国商业联合会科学技术奖一等奖、中国轻工业联合会技术发明奖一等奖各1项。担任国家自然科学基金通讯评审专家,浙江省自然科学基金通讯评审专家,Rheology杂志副主编,Frontiers in Materials客座编辑,Langmuir、Journal of Colloid and Interface Science、Carbohydrate Polymers、Food Chemistry等国际期刊和《高校化学工程学报》、《食品科学》等国内期刊的审稿人。

〖研究方向〗:
食品胶体与界面科学、形貌失稳流变学
以具有小刺激大响应特点的环糊精包合物和纳米纤维素为单元,通过合理的设计构筑兼具动态响应性和精确可控结构的乳液和凝胶体系;围绕介观尺度下有序结构的构建、相间作用解析以及工程化匹配等方面需求,探索受限几何空间中液滴的自扩散和液滴间流体动力学相互作用;通过施加不同类型的剪切场促进体系发生自组织与形貌演化,获得剪切诱导相变的内在规律和关键参数;利用标度理论和量纲分析甄别影响形貌失稳的本征参数,建立表达动态流变响应和微观结构演化关系的计算关联式。
基于形貌失稳流变规律和乳液模板技术构建可食用油脂凝胶、微胶囊、3D打印材料等系列产品。
